The word noon in Kashmiri means salt and chai means tea, so comes the name noon chai. It is also called pink tea because it is pink in color.  This exotic pink-colored tea is a traditional beverage consumed in Kashmir. Out of all other authentic Kashmiri delights, this pretty pink tea with Himalayan rock salt and Kashmiri nuts really stand out. This Kashmiri beverage is entirely different from the simple chai in taste, color, and recipe. This delectable beverage (noon chai) can be savored by both adults and kids alike and can be enjoyed with some crunchy biscuits or parantha (flat-fried bread) on chilly winter evenings.
Noon chaKashmir is traditionally made from a specific type of green tea leaves, baking soda, milk, and is usually cooked in a samovar. A pinch of baking soda in kashmiri noon chai gives it a pronounced pink color.

How To Make Kashmiri Tea ( Noon Chai )

  1. Boil 4 cup water and brew kashmiri tea leaves, till frothy.

  2. Add the bicarbonate of soda and whisk vigorously for about 10 seconds

  3. Add two more cups of water and cardamom powder to the broth of Kashmiri tea. Brew till tea turns bright red.

  4. Now on medium flame, add the milk and whisk the Kashmiri Noon Chai (Tea) broth

  5. Very vigorously to achieve a slight froth. The color of the Kashmiri Noon Chai ( tea ) should now be a lovely dark pink.

  6. Adjust milk to the color of your choice.

  7. Add the salt or sugar and stir the Kashmiri Noon Chai (Tea)

  8. Pour into a cup and sprinkle with crushed pistachios and almonds and you have refreshing Kashmiri Tes (Noon Chai )
