Kashmiri Rajma Recipe:
Prep Time: 20 minutes Cook Time: 30 minutes Total Time: 50 minutes Soaking Time: 7-8 hours Servings: 2
Ingredients:
- 1 cup Kashmiri Rajma (Nitch Rajma), soaked overnight, drained & rinsed
- ½ cup tomato puree
- 1 onion, finely chopped
- 5-6 tbsp curd, whisked
- 1 bay leaf
- Oil, as required
- A pinch of asafetida
- 1 tsp cumin seeds
- 1 tsp ginger powder
- 1 tsp ginger paste
- ½ tbsp coriander powder
- 1 tbsp Kashmiri chili powder
- 1 slit green chili
- ½ tsp homemade garam masala (dry roasted and powdered mix of 1 black cardamom, 5 green cardamoms, 4 ½ tsp peppercorns, 2 pcs cinnamon)
- Salt, to taste
- 1 tbsp coriander leaves, finely chopped
Cooking Process:
- Cook the Rajma: In a pressure cooker, add the soaked and rinsed rajma, bay leaf, and enough water to cover the beans. Cook under pressure for 15 minutes after the first whistle, then let the pressure release naturally.
- Prepare the Masala: Heat oil in a pan, add cumin seeds and asafetida. Once the seeds crackle, add onions and sauté until golden. Mix in ginger paste and ginger powder, sauté for a few minutes.
- Simmer the Gravy: Add tomato puree and cook until oil separates. Stir in whisked curd gradually to prevent curdling. Add Kashmiri chili powder, coriander powder, green chili, and salt.
- Combine and Cook: Add the cooked rajma along with the cooking water. Mash some beans to thicken the gravy. Let it simmer for 15-20 minutes. Stir in homemade garam masala and cook for an additional 5 minutes.
- Garnish and Serve: Sprinkle with chopped coriander leaves. Serve hot with rice or flatbreads.
